Recipe: Chicken Breast a' l'Orange

We are pleased to welcome Dr. Brenton to our practice beginning September 4th.  Dr. Brenton was born in Dearborn, MI and attended the University of Michigan, Ann Arbor for both undergraduate and medical school training.  She completed her residency at Indiana University in Indianapolis.  Dr. Brenton and her husband Matthew live in Littleton with their two children, Louis and Abigail.  She enjoys sailing, hiking, camping, scouting and volleyball.

Bladder Problems?

Do you or someone you know have problems with leaky bladder?  Don’t waste money on diapers or pads.  There are a number of excellent, relatively minor surgical techniques that do not require hysterectomy. Physical therapy and medications are also effective in many cases.  Come in and see our doctors to see if you have a problem that is treatable. 

Chicken Breast a' l'Orange

 You may find this Recipe interesting.  It is really good, a bit rich and sweet, but is a nice change once in a while....This is for a crock pot.  I haven't tried converting it to a stovetop or oven method. (Dr. Rowley)

3 Whole Chicken Breasts, Halved 2/3 cup flour
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
dash of pepper
dash of garlic powder (optional for me)
2-3 sweet potatoes, peeled and quartered in 1/4-inch slices
1 can cream of celery or cream of chicken or cream of mushroom1 can sliced mushrooms
1 cup orange juice
1 teaspoon grated orange peel
2 teaspoons brown sugar
3 tablespoons flour
Buttered rice or buttered noodles, your choice

Combine flour, salt, nutmeg, cinnamon, pepper, and garlic powder.     Coat the chicken with the flour mixture.     Place sweet potato slices on bottom of crock pot.     Place the chicken breasts on top of the sweet potatoes     Combine soup with remaining ingredients, except the rice.     Pour mixture over the chicken.     Cook on low for 8-10 hours, high for 4-5 hours, or until chicken is done and vegetables are tender.     Serve over rice, or can be served over noodles. Or just dig in!
